A Match Made in Dessert Heaven: Caramel Chocolate Tart

Ingredients:

For the tart crust:

• • 1 ½ cups all-purpose flour

• • ½ cup unsweetened cocoa powder

• • ½ cup powdered sugar

• • 1/2 cup unsalted butter, cold and cubed

• • 1 large egg yolk

• • 2–3 tablespoons ice water

For the caramel layer:

• • 1 cup granulated sugar

• • 6 tablespoons unsalted butter, cubed

• • 1/2 cup heavy cream

• • 1 tsp vanilla extract

• • A pinch of salt

For the chocolate ganache:

• • 8 ounces semi-sweet chocolate, chopped

• • 1 cup heavy cream

• • 1 tablespoon unsalted butter

Instructions:

Preheat your oven to 350°F (175°C). In a food processor, combine flour, cocoa powder, and powdered sugar. Add cold butter and pulse until crumbly. Mix in egg yolk and just enough ice water until the dough comes together.

Press dough into a greased tart pan. Prick the bottom with a fork, then bake for 15 minutes. Allow to cool.

For the caramel, cook granulated sugar over medium heat until melted and golden. Stir in butter until melted, then carefully whisk in heavy cream. Add vanilla and salt. Pour over the cooled crust, letting it set.

Prepare ganache by heating cream until steaming, then pour over chocolate. Stir until smooth. Pour over set caramel layer. Chill for at least 2 hours before serving.
