For the crust:
– 2 ½ cups all-purpose flour
– 1 cup vegan butter, cold and cubed
– 1 tsp salt
– 1/2 cup ice water

For the filling:
– 1 tbsp olive oil
– 1 medium onion, diced
– 2 cloves garlic, minced
– 2 carrots, diced
– 2 ribs celery, diced
– 1 small potato, diced
– 1 cup frozen peas
– 1 cup vegetable broth
– 1 cup unsweetened almond milk
– 2 tbsp all-purpose flour
– 1 tsp dried thyme
– 1 tsp dried rosemary
– Salt and pepper to taste

1. Preheat the oven to 400°F (200°C).

2. To make the crust, combine the flour and salt in a large mixing bowl. Add the cold, cubed vegan butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs. Slowly add in the ice water, a little at a time, until the dough comes together.

3. Divide the dough in half and roll out one half on a floured surface to fit a 9-inch pie dish. Transfer the rolled-out crust to the pie dish and press it into the bottom and sides.

4. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

5. Add the carrots, celery, potato, and peas to the skillet and cook for another 5 minutes.

6. In a small bowl, whisk together the vegetable broth, almond milk, flour, thyme, rosemary, salt, and pepper. Pour this mixture over the vegetables in the skillet and bring to a simmer. Cook for 5-7 minutes, stirring occasionally, until the filling has thickened.

7. Pour the filling into the prepared pie crust. Roll out the remaining dough and place it on top of the pie. Pinch the edges of the top and bottom crusts together to seal, then cut a few slits in the top crust for steam to escape.

8. Bake the pot pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

9. Allow the pot pie to cool for a few minutes before serving. Enjoy!
