Spring is the perfect season to indulge in fresh, vibrant flavors, and what better way to celebrate than with a delightful asparagus and Gruyère quiche? This dish, rich in taste and texture, is ideal for brunches, picnics, or a light dinner. Here’s a simple recipe to bring a taste of spring to your table.

Ingredients:

• • 1 prepared pie crust (store-bought or homemade)

• • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces

• • 1 cup Gruyère cheese, grated

• • 3 large eggs

• • 1 cup heavy cream

• • 1 cup milk

• • Salt and pepper, to taste

• • 1 teaspoon Dijon mustard (optional)

• • Fresh herbs (e.g., chives or parsley) for garnish

Instructions:

Preheat your oven to 375°F (190°C) and place the pie crust in a pie dish. Prick the bottom with a fork to prevent bubbling.

Blanch the asparagus in boiling water for 2-3 minutes, then transfer to an ice bath. Drain and set aside.

In a mixing bowl, whisk together eggs, cream, milk, salt, pepper, and mustard until well combined.

Sprinkle half of the Gruyère cheese over the bottom of the crust, then layer in the asparagus pieces. Pour the egg mixture over the top, ensuring the asparagus is evenly distributed. Finally, sprinkle the remaining Gruyère on top.
