Ingredients:

Batter:

2 cups dashi broth (or water)

2 large eggs

1/2 tsp salt

Fillings:

1 cup diced cooked octopus (can substitute with shrimp or tofu)

1/4 cup sliced green onions

1/4 cup pickled ginger

1-2 tbsp shichimi togarashi (Japanese seven-spice)

Toppings: Spicy mayo (mix mayo with Sriracha to taste)

Takoyaki sauce (or okonomiyaki sauce)

A sprinkle of bonito flakes and seaweed flakes

Instructions:

Prepare the Batter: In a large bowl, whisk together the flour, dashi, eggs, soy sauce, and salt until smooth.

Heat the Takoyaki Pan: Preheat the takoyaki pan over medium heat and lightly oil each cup.

Add the Batter: Pour the batter into each cup, filling them about 2/3 full.

Incorporate Fillings: Add the diced octopus, green onions, pickled ginger, and a pinch of shichimi togarashi to each cup.

Cook and Turn: After about 2-3 minutes, use a skewer to flip the takoyaki balls. Keep turning them every 1-2 minutes until they are golden brown and crispy on the outside.

Serve: Remove the takoyaki from the pan, drizzle with spicy mayo and takoyaki sauce, then top with bonito flakes and seaweed.
