• • 1 zucchini, diced

• • 1 can black beans, rinsed and drained

• • 2 cups cooked quinoa

• • 1 teaspoon cumin

• • 1 teaspoon chili powder

• • Salt and pepper to taste

• • 1 cup salsa

• • 1 cup shredded cheese (cheddar or vegan alternative)

Instructions:

Preheat the Oven: Preheat your oven to 350°F (175°C).

Sauté the Vegetables: In a large skillet, heat a teaspoon of oil over medium heat. Add the sliced onion and bell pepper and sauté until softened. Add the zucchini and cook for another 3-4 minutes.
