Ingredients:

For the Cupcakes:

    • 1 ½ cups all-purpose flour
    • 1 cup granulated sugar
    • ½ cup unsalted butter, softened
    • 2 large eggs
    • 1 tablespoon vanilla bean paste (or 1 vanilla bean, seeds scraped)
    • 1 ½ teaspoons baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • ½ cup buttermilk

For the Espresso Frosting:

    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 3 tablespoons brewed espresso (cooled)
    • 1 teaspoon vanilla extract
    • A pinch of salt

Instructions:

Prep & Bake: Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners. In a large bowl, cream the butter and sugar until fluffy. Add the eggs and vanilla bean paste, mixing until combined.

Mix Dry Ingredients: In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the butter mixture, alternating with buttermilk until smooth.

Bake: Fill cupcake liners about 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.

Make Frosting: In a bowl, beat softened butter until creamy. Gradually add powdered sugar, brewed espresso, vanilla, and salt, and beat until fluffy.

Frost: Once cupcakes are cooled, generously frost with the espresso frosting.
