Instructions:
Preheat your oven to 180°C (350°F). Grease and line an 8-inch square cake tin.
In a bowl, combine flour and baking powder. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in milk and vanilla.
Gradually add the dry ingredients to the wet mixture. Pour into the tin and bake for 25 minutes. Let cool and slice in half horizontally.
Spread jam between layers and sandwich them together.
For icing, mix powdered sugar, cocoa, and boiling water, adding butter until smooth. Dip the cake in the icing and roll in coconut.
Let set before slicing and serving.
