Massaman Curry Recipe

Ingredients:

• • 1 lb beef or chicken, cut into cubes

• • 2 tablespoons Massaman curry paste

• • 1 can (14 oz) coconut milk

• • 1 large potato, diced

• • 1 onion, chopped

• • 1 cup beef or chicken broth

• • 1 tablespoon fish sauce

• • 2 tablespoons brown sugar

• • ½ cup roasted peanuts or cashews

• • Fresh cilantro, for garnish

Instructions:

In a large pot, heat a tablespoon of oil over medium heat. Add the onion and cook until translucent.

Stir in the Massaman curry paste and sauté for another minute until fragrant.

Add the meat and sear until browned.

Pour in the coconut milk and broth, and bring to a simmer.

Add the potatoes, fish sauce, and brown sugar. Cover and cook for 30-40 minutes until the meat is tender.

Stir in roasted peanuts or cashews and simmer for an additional 5 minutes.

Garnish with fresh cilantro before serving.
