Ingredients:

• • 1 cup cooked lentils (green or brown)

• • 1 cup finely chopped mushrooms

• • 1 small onion, diced

• • 2 cloves garlic, minced

• • 1/2 cup breadcrumbs

• • 1/4 cup fresh parsley, chopped

• • 1 tsp soy sauce

• • 1 tsp smoked paprika

• • 1/2 tsp cumin

• • Salt and pepper, to taste

• • Olive oil, for cooking

• • Burger buns and toppings of your choice (lettuce, tomato, avocado, etc.)

Instructions:

In a skillet over medium heat, add a drizzle of olive oil and sauté the diced onion and minced garlic until translucent.

Add the chopped mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.

In a bowl, combine the cooked lentils, sautéed mixture, breadcrumbs, parsley, soy sauce, smoked paprika, cumin, salt, and pepper. Mix until well combined.

Form the mixture into patties and refrigerate for about 30 minutes to help them firm up.

Heat a little olive oil in a pan over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown.
