Ingredients:

• • 1 cup Arborio rice

• • 4 cups vegetable or chicken broth (kept warm)

• • 1 cup dry white wine

• • 1 medium onion, finely chopped

• • 2 cloves garlic, minced

• • 1 cup mixed mushrooms (cremini, shiitake, or button), sliced

• • 2 tablespoons olive oil

• • 3 tablespoons unsalted butter

• • 1/2 cup grated Parmesan cheese

• • 2 tablespoons truffle oil (adjust to taste)

• • Fresh parsley, chopped (for garnish)

• • Salt and pepper to taste

Instructions:

In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent, about 3-4 minutes.

Stir in the mushrooms and cook until tender, around 5 minutes. Season with salt and pepper.

Add Arborio rice to the skillet and stir for about 2 minutes, allowing the grains to toast slightly.

Pour in the white wine, stirring continuously until it’s mostly absorbed.

Begin adding the warm broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This process takes about 18-20 minutes.

Once the rice is creamy and al dente, stir in butter, Parmesan, and truffle oil. Adjust seasoning if necessary.

Serve hot, garnished with fresh parsley.
