Vegan Mushroom Bourguignon: A Cozy Dish for Every Season

Mushroom Bourguignon is a comforting twist on the classic French dish, perfect for vegans and anyone looking to enjoy a hearty meal. Packed with rich flavors and seasonal ingredients, this dish warms the soul in any weather.

Ingredients:

• • 1 pound (450g) mixed mushrooms (cremini, shiitake, and button), sliced

• • 1 large onion, diced

• • 2 carrots, sliced

• • 3 cloves garlic, minced

• • 1 tablespoon tomato paste

• • 1 cup red wine (vegan-friendly)

• • 2 cups vegetable broth

• • 1 tablespoon soy sauce

• • 1 teaspoon dried thyme

• • 1 bay leaf

• • 2 tablespoons olive oil

• • Salt and pepper, to taste

• • Fresh parsley, for garnish

Instructions:

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onions and carrots, cooking until softened (about 5 minutes). Stir in the garlic and cook for an additional minute.

Cook Mushrooms: Add the sliced mushrooms to the pot. Sauté until they release their moisture and become golden brown (approximately 8-10 minutes).

Add Flavorings: Stir in the tomato paste, followed by the red wine, scraping up any browned bits from the pot. Let it simmer for 2-3 minutes.

Simmer: Add vegetable broth, soy sauce, thyme, and the bay leaf. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, until the sauce thickens. Season with salt and pepper to taste.
