Vegan: Plant-Based Mushroom and Cheese Croquettes for Every Palate

Ingredients:

• • 1 cup of finely chopped mushrooms (cremini or button)

• • 1 medium onion, finely diced

• • 2 cloves garlic, minced

• • 1 teaspoon olive oil

• • 1 cup of cooked quinoa

• • 1 cup of vegan cream cheese

• • 1 tablespoon nutritional yeast

• • 1 teaspoon dried thyme

• • Salt and pepper to taste

• • 1 cup of breadcrumbs

• • 1/2 cup flour (for dredging)

• • Plant-based milk (for dredging)

• • Oil for frying

Instructions:

Sauté the Vegetables: In a skillet, heat the olive oil over medium heat. Add the onions and garlic, sautéing until softened. Add the mushrooms and cook until they release their moisture and soften.

Mix the Filling: In a large bowl, combine the cooked quinoa, sautéed mushroom mixture, vegan cream cheese, nutritional yeast, thyme, salt, and pepper. Mix until well combined.

Form Croquettes: Using your hands, shape the mixture into small balls or patties.

Coat the Croquettes: Dredge each croquette in flour, then dip in plant-based milk, and finally coat with breadcrumbs.

Fry: In a pan, heat oil over medium heat and fry the croquettes until golden brown on all sides, about 3-4 minutes per side.
